Motorcycle Helmets

I'm not much on getting on the back of a motorcycle or drive one. But I do have friends who love the adventure of riding and down here in Florida you can do it pretty much the whole year.

There is no helmet law in Florida, but I do notice that the majority of the people who ride around here do wear helmets.  And not very pretty ones I may add.

Chicken Salad

When I stock up on chicken breasts, I love to cook many breasts in the crock pot, dice up and either freeze that or make chicken salad with it.  Serves great either on a salad or on a sandwich.

Chicken Salad

Ingredients
1 pound chicken breasts
Salt and pepper
1 onion, quartered
2 celery stalks
1 cup chopped celery
4 hard-boiled eggs, chopped
2 teaspoons seasoning salt
1/2 cup mayonnaise
1 teaspoon lemon-pepper seasoning
1/4 teaspoon ground black pepper
2 to 3 tablespoons chicken stock

Directions
Place chicken breast in crock pot with celery stalks and quartered onion.  Add a bit of liquid to the bottom of the crock pot for moisture.  Let cook on low for 3 or 4 hours.  Don’t over cook or the chicken will be very dry. Remove chicken from pot and let cool. Dice the chicken and place in a large bowl. Add the chopped celery, eggs, seasoning salt, mayonnaise, lemon-pepper, pepper and mix well.

TIP:  I usually put more than a pound of chicken breasts in the crock pot, dice up all of the chicken and then put what is left over in the freezer for later.

Crock Pot BBQ Chicken Nachos

I love really easy recipes and especially when I can put them in the crock pot.  This is so great to eat while watching football

Crock Pot BBQ Chicken Nachos

3 boneless skinless chicken breasts
1/2 bottle BBQ sauce
1/2 14 oz. bag  corn tortilla chips
8 ounces Shredded Cheddar or Colby/Monterey Jack Cheese
Sour cream and avocado for garnish if desired.

DIRECTIONS
Place chicken breast in crock pot.  Cover with BBQ sauce and cook on low for 3-4 hours or until done.  Do not overcook or your chicken will be dry.

Shred chicken with a fork.

Place tortilla chips on a cookie sheet in a single layer.  Top with chicken and shredded cheese.  Cook under the broiler for 3-4 minutes or until cheese is melted.  Serve with sour cream and avocado if desired.

Small Business Office Needs

I love my small office and use it everyday for our business but I was looking around the other day and realized I needed to stock up on items for my small business office.

One of the things I need desperately is a new calculator.  The one I have now, you have to hit it a couple of times before the LCD panel lights up to use it.  Its must have a short some where.  The Source website has a great deal on calculators that I am looking at.  Can't beat the prices they have to offer on them.

Something else I saw that has peaked my interest is a digital frame which also holds pens, pencils and other small office items.  I would love to be able to see some of my most precious pictures and not just one.  Really nice to have in any office.
